Duck

Two types of duck, Mallard and Muscovy, are offered for sale at the farm. Mallard ducks are the closest thing to a wild duck that can be found. They are not wing clipped and are raised in spring fed ponds, so they can fly freely and exercise like all the other poultry, making their meat a rich, dark red color. Dressed birds weigh 2¼ - 2 ¾ pounds. Mallard ducks are also sold for hunting and for training hunting dogs.

Muscovy ducks are raised in the same way as the mallards but are a leaner, thin-skinned bird. They are 40% leaner than Pekin or Long Island ducks and have 50% more breast meat. Dressed female Muscovy ducks weigh from 3 ½ - 4 ½ pounds, while males weigh from 6-8 pounds.
