Pronounced poo-SAHN, in French meaning young chicken, Poussin is an alternative name for a small-sized chicken. They are just less than 28 days old, usually weighing 16-20 ounces. They are often called a “Spring Chicken”, which have a larger dress weight. Here at the Griggstown Farm Market, they have been carefully raised on select grains to produce a succulent, tender, and delicious breast. These delicate birds are raised all-natural, to produce “fork-tender” moist meat. Low in fat and cholesterol, the poussin is as healthy, as it is delicious. They are sold whole, for roasting in the oven, or butterflied wih a marinade (soy ginger or fresh herb) perfect for on the grill!
