A pheasant is a hen-like bird related to the grouse, partridge, peacock and other various domestic and jungle fowls. Pheasants are characterized by their waddling heads and long tails and by the brilliant plumage and elaborate courtship displays of the male. They are excellent fliers and are freely raised in pens. They must wear peepers that are gently attached to their beaks to prevent fighting. Pheasant meat is firm textured, full of flavor, naturally low in fat, and cholesterol. Pheasant is the most widely consumed game bird in the world. Prized by kings, our free-range pheasant has a distinctive taste and texture. Pheasant is excellent when braised, sautéed, or roasted.
