Muscovy and Mallard are the two major types of domestic duck. There is great variation between the breeds with regard to color, shape, size, egg-laying ability and carcass quality. Domestic Muscovy can be found in over 10 solid colors or patterns, while true wild Muscovy are typically black or brown with white wing patches. Weight can reach in excess of 15 lbs. Mallards usually weigh less, and have bright green feathers on their heads, and some blue patches in the wings of the males and the females are a dull brown all over. Like all the other birds raised here at the farm; free-range & all-natural is the standard. Duck is available whole, or you can purchase a boneless breast. Duck breast is available plain or with a soy ginger marinade. Duck breast is best cooked to a medium rare.
