Quail is a general name for several species of mid-sized birds in the pheasant family. Quails are small, plump terrestrial birds. They nest on the ground and are capable of short, rapid bursts of flight. The Japanese Coturnix quail is a species found in East Asia. They are kept mostly to produce eggs. The Coturnix is the breed owner George Rude began raising in 1973, starting with just a dozen. He continues the standard of raising them free-range & all-natural to this day. Annually, the farm raises 60,000 of these birds live, producing up to 100,000 of their beautiful speckled eggs. The eggs are sold to restaurants in the tri-state area, and others are incubated. The quail are sold in a pack of 4 (serves 2), they marinate very well, and should be cooked quickly over high heat, grilling, broiling or sautéing. Serve with a very cold Rose!
